Who was he trying to demonstrate this to? His fellow jurors? Don’t they already know the reality of what happened?

That may be why they found it so disturbing - if he didn’t think they knew what happened my sense is that they would have rather he expressed that verbally, rather than simulating strangulation on a water bottle.

One could reasonably assume that the demonstration occurred after verbal expression of both opinions had reached an impass

Because this was not an instantaneous moment, it was premeditated, carefully plotted, and it took a long time to slowly choke the life out of one child after another after another. LC cannot be trusted to rejoin society ever again. The problem with the insanity defense is that it opens the possibility that she could be let free in a matter of years once a shrink determines her to be “sane”. And judging by the ridiculous tribalism surrounding this tragedy, that’s not out of the question.
