100%. See the 3rd sticks he pokes in. A particle jumps out of nowhere and goes into it along with the stick. Why this happens is clear when you reverse the video, the particle got pulled out with the stick.

I don't quite get the point of this. He's throwing down the pieces and they seem random but then he turns and they're not? I mean sure either it's reversed or he knew where to stack them but what was the point

It's obviously reversed. You see the things wiggle and suddenly stop when he plants one
BUT to actually answer your question, the point of it is a performance. It's a cool visual piece but to attract views on the internet, being performative helps. If it wasn't disingenuous, it would be a pretty cool one (even though I'm one to say that it's a bit of a shame that internet makes it more important to have a catchy process than a pretty result).

Yeah it looks like it is.
I say it often, it'll be harder and harder to distinguish AI. And in the case of simple silhouettes in black and white like this, it's downright impossible.
The consequence is that from now on, a viewer can only assume simple drawings are AI. If you're a creator and you want people to know for sure it isn't, the burden is now on you to show steps of the process to demonstrate you did it with your own hands. It sucks that we've come to that, but that's the way it is.
